Quick & Kosher: Chickpea-Olive Salad
Eco-Kashrut, Keeping Kosher, Living Jewishly March 2nd, 2007They say that necessity is the mother of all invention and after coming up with this concoction, I can’t say I disagree.
One night this week I was hungry and not in the mood for complicated recipes, cooking and/or clean up. So I did a little bit of scrounging and this is what I came up with.
It’s quick, it’s kosher and its even vegetarian to boot.
Required Ingredients
- 1 19oz Kosher certified can of chickpeas.
- 1 Kosher certified jar of sliced olives green or black it really doesn’t matter.
- 1 can opener.
- 1 spoon.
- 1 medium-sized mixing bowl.
- 1 colander
Step one: Open up the can of chickpeas and dump the entire can into the colander.
Step two: Thoroughly rinse the chickpeas under cold running water.
Step three: Shake dry the chickpeas and dump them into the mixing bowl.
Step four: Open up the jar of sliced olives and add 3-5 spoonfuls to the mixing bowl.
Step five: Using your spoon thoroughly mix the olives and chickpeas together.
Step six: (optional) you can also add an additional spoonful of olive juice if you desire a stronger flavor.
That’s pretty much it.
You can easily get to generous servings out of this and am sure three if you try to stretch it out a little bit.
You can of course at all add sorts of things if you want it a little more “haute cuisine”. For example parsley, chives, crushed chili peppers or even a spoonful or two of corn.
Anyhow this is a quick and easy meal that’s perfect for lazy weeknight supper’s or quick lunches.

I once had a painful experience with chickpeas–or rather something with a lot of chickpeas in it. So, until recently, it had been years since I dared to eat something with even one little chickpea in it.
However, I have been slowly reintroducing items with chickpeas, which are such a prominent part of Eastern Mediterranean cooking.
Meanwhile, while beef has been pretty much off limits to me for some time, I used to be able to digest pork very well. Not anymore.
Maybe my stomach is converting right along with the rest of me!

Sounds good.
I had a salad including olives and garbanzobeans today for lunch. There were also lettuce, carrots, and avocado in it, though. And i bought it instead of making it.
What do you mean by “Using your spoon thoroughly makes the olives and chickpeas together”? Is that supposed to be mash? mix?
